Thai Chicken Salad – Laap Gai

This spicy chicken salad, also known as Laap Gai, is made with lime, chilies, fresh herbs, vegetables, and roasted ground rice. Traditionally prepared with minced chicken, my take on this classic dish is made with long bite-size chicken strips. The longer strips allow you to easily grasp the chicken with chopsticks or a fork. Serve with rice and a side of fresh herbs and vegetables.

Thai Chicken Salad

serves 3-4

1 lb. skinless, boneless chicken – sliced into long bite-size strips
1 tsp. seasame oil
¼ cup raw peanuts – roasted, roughly chopped
2 Tbsp. uncooked jasmine rice – roasted, ground (available at Asian markets)
1 tsp. dried galanga – roasted, ground
1 Tbsp. lemongrass – minced
4-5 garlic cloves – minced
1 large shallot – finely chopped
3 scallions (bottom half) – finely chopped
2 small carrots – julienne
½ cup mint leaves – roughly chopped
¼ cup cilantro – roughly chopped
2 cups iceberg lettuce – sliced into long bite-size strips
3 Thai chillies – finely sliced into rounds
1 Tbsp. fish sauce
2 limes – juice only
1 tsp. palm sugar (or substitute with white sugar)

1. chicken
In a pan on high heat, cook chicken in sesame oil until thoroughly cooked, about 5-6 minutes. Set aside to cool.

2. raw peanuts, jasmine rice, dried galanga
Roast raw peanuts, jasmine rice and dried galanga separately in pan with no oil on medium high heat until fragrant and light gold brown. Let cool before finely grinding. Set aside.

3. lemongrass, garlic, carrots
Finely mince lemongrass and garlic. Julienne carrots. Place lemongrass, garlic, and carrots in a large salad bowl.

4. shallot, scallions
Add finely chopped shallot and scallions to large salad bowl.

5. mint leaves, cilantro
Roughly chop mint leaves and cilantro. Add to large salad bowl.

6. iceberg lettuce
Slice into long bite-size pieces. Add to large salad bowl.

7. Thai peppers, fish sauce, lime juice, palm sugar
In a small bowl, mix together all ingredients for dressing.

8. final step
Add chicken, ground rice and galanga to large salad bowl and pour in dressing. Add roasted peanuts. Toss well and and serve immediatley.
